American Pancakes

Why should we only eat pancakes on Shrove Tuesday? A good question. I suppose we have used up all our eggs and milk in time for lent if we are religious and too British to eat anything at the wrong time of year if not. Can you imagine eating an Easter Egg in October or Toffee Apple in May? I thought not.


However, do what you like. I liked these pancakes, the photo is the first time I had made them and they were bloody good! Light, fluffy, moorish and so deliciously calorific. I stacked mine up with layers of Cadbury's Caramel Buttons, Strawberries and Blueberries and smothered the lot in Honey, just for good measure. You can add whatever you like, be creative. I am sure these would be easily made gluten free if you are so inclined. Might have to work on a vegan recipe, there are lots of eggs and milk in these...


Go experiment, wave the Star Spangled Banner and eat your heart out! Sweet, savoury, with added colour or flavourings to the batter, go nuts (or add nuts)!


Ingredients. Makes enough for four hungry chums


220g Self Raising Flour

1.5tsp Baking Powder

2tbsp Caster Sugar

3 Eggs

1 Pinch of Salt

200ml Milk

25g Butter, melted


Method


1. Mix the Flour, Sugar, Salt and Baking Powder in a large bowl.

2. Using a whisk, add the Eggs and Butter then pour in the milk slowly and whisk until smooth. The batter will be thicker than normal pancakes. Pour it into a jug thats easy to pour from.

3. Melt a little more butter in a large pan, add a drop of olive oil to stop the butter burning. Great tip!

4. By the time the butter has melted and the pan had warmed up, there should be air bubbles popping on the surface of the batter.

5. Pour slowly into the pan, about 8-10cm in diameter, but careful they don't get too close to touch each other. I only managed to get two in my pan at a time. Obviously the smaller you do, the more you can get in at once.

6. Cook for 2 minutes, the air bubbles will be going mad of the surface of the pancakes and they should rise slightly. Turn them over and cook for another minute.

7. Simple as that! Stack them high, melt the chocolate, cracked the maple syrup, you can even crisp up some bacon and fry an egg for a savoury option. You can keep them in a warming draw or very low oven for a few minutes to make sure you have a plate full to share with your pals. Or devour yourself. No judgement here.
