Apple Caramel Cupcakes

These may seem a little season-specific, they were called Toffee Apple Cupcakes on Instagram, but you can enjoy them all year round as they are definitely delicious. Obviously better when the apples are in season... I used ready made caramel, in a tin for speed but if you fancy making your own, thats cool.


I used to love Bonfire Night and Firework displays as a child, it's something that I don't do very often as an adult, but memories of chilly nights, wrapped up in scarves and hats with a sparkler and toffee apples are very fond to me. Back home in Somerset some family friends would open up their farm and it seemed the whole village would arrive to join in the fun, it really was a joyous time of year.


Ingredients. Makes 12


175g Plain Flour

1tsp Baking Powder

1/2tsp Salt

1/2tsp Ground Cinnamon

1/2tsp Ground Ginger

60g Butter, softened

200g Caster Sugar

1 large Egg, at room temperature

1/2tsp Vanilla Extract

90ml Buttermilk, at room temperature

2 Medium Apples, peeled and diced into small cubes, or roughly grated


Caramel Buttercream:


150g Butter, softened

375g Icing Sugar

100g Caramel or Dulce de Leche, plus more to decorate

50ml Double Cream

Pinch of salt, and more to decorate


Method


1. Set the oven to 160 degree fan, or equivalent and line a 12 cupcake tray with paper cases

2. Beat the butter and sugar in your mixer until light and fluffy. Add the egg and vanilla extract. Beat to fully combine for about 2 minutes

3. Now add half of the flour and mix, adding the butter milk and the remaining flour, baking powder and spices

4. Remove from the mixer and fold through the apple and distribute evenly

5. Divide evenly between the 12 cases and pop in the oven for 20-25 minutes, or until a skewer comes out clean. Allow to fully cool

6. Make the buttercream by combining the butter and icing sugar into a light fluffy paste then add the rest of the ingredients and beat until thick and glossy

7. Pipe or spread the icing as you see fit and drizzle with extra caramel and sea salt flakes. You can even get fancy and make mini toffee apples if you like, or sugar work flames?

8. I am sure these count as one of your 5-a-day...
