Avocado & Lime Loaf Cake

It has taken me ages to write about this one, so apologies for that. I am sure you have all been clambering to get the recipe. The original cake was made for a friend at work who was leaving my department and loves avocados. I was doing a little research and I came across an idea that replaces much of the fat in the cake and icing with avocado, together with lime which is always a win for me. The colour in the picture is all natural and I like how vivid it is, it's a wonder! It looked great until we took a ride on the underground where the London commuters had no care for cake and it took a sudden dive to the left. We recreated it in the office but it didn't ever quite look the same, but the taste was spot on, so I guess thats what really matters...


Ingredients. Makes a 2lb loaf


1 Large Ripe Avocado, mashed

85g Butter, at room temperature

200g Caster Sugar

1 Lime, zested and juiced

2 Large Eggs

200g Plain Flour

1tsp Baking Powder

1tsp Baking Soda

100ml Buttermilk

Pinch of Salt


Icing


½ Ripe Avocado, mashed

1 Lime, zested and juiced

35g Butter

100g Icing Sugar


Method


1. Preheat your oven to 160 degree fan, or equivalent and prepare your loaf tin. Seriously, try silicone, it's so easy. Otherwise, get your baking paper out

2. Beat the butter and sugar together until pale and fluffy. Add the avocado with the lime and beat again

3. Add a little of the flour and mix, followed by one of the eggs. Now the rest of the flour and baking powder / soda followed by the other egg, mixing as you go. Add the buttermilk and a pinch of salt and ensure everything is fully combined

4. Pour the mixture into your tin and bake in the oven for 50-55 minutes, or until a skewer comes out clean from the middle if the loaf

5. When you are happy, remove from the oven and allow to cool completely in the tin

6. Whilst the cake is cooling, make the icing. Simply combine all the ingredients and beat into a light, fluffy joy!

7. I cut my cake in half lengthways and added half the icing to the top and half in the middle, but you can also just spread it all on top. Its your cake, you decide! Sprinkle with a little more lime zest, slice thickly, sit back and enjoy!
