Baked Halloumi & Chorizo

What can I say. Cheese, sausage, spice and an oven! Simple pleasures make for a happy boy. The joys of Tray-Bake-Suppers are numerous - you can add anything; you can either cook really quickly or REALLY slowly; all washing up is contained in one tray; they are great for plonking in the middle of the table for friends to dive in and share; you can be creative; and they tend to be jolly pretty, to name but a few.


This is no exception and I kept the tomatoes on the vine for extra insta-appeal! I like to mix colours up, so I used an orange pepper with the red onion, green peppers, red tomatoes and white halloumi.


The slower the roast, the more beautiful the flavours!


Ingredients. For 2 or 4, depending how hungry or what else you are having


225g Halloumi (1 block)


2tsp Rose Harissa Paste

1 Lemon, zest & juice

1 Red Onion

4 Whole Cloves of Garlic

1 Large Orange Pepper

200g Chorizo

150g Cherry Tomatoes, on or off the vine

8 Padron Peppers

400g Chickpeas (1 tin)

Olive Oil

Salt


Method


1. Preheat the oven to 225 degrees fan

2. Slice the halloumi into 0.5cm thick pieces and put in a bowl with the harissa paste, zest of the lemon and a little olive oil, coat the halloumi and leave to one side

3. In a roasting pan, add the red onion and orange pepper, that have been cut into chunks, along with the garlic and drizzle with olive oil and salt flakes. Add the sliced chorizo and pop in the oven, bake for 10 minutes

4. Give everything a good shake and add the tomatoes and padron peppers. Reduce temperature to 200 degrees, you may want a little more olive oil, you decide, bake for another 20 minutes, watching and shaking occasionally to stop the peppers burning

5. After 20 minutes, add the halloumi and chickpeas to the tray but keep the marinade paste in the bowl and add the juice of the lemon

6. Bake for a final 10 minutes. When ready, remove form the oven and drizzle over the lemon and harissa mixture and serve in the middle of the table so everyone can get stuck in!

7. Either serve on it's own or with chunky bread to soak up all the yummy juices!

I made this recently to be part of an simple Saturday supper - absolutely delicious! Easy, flavoursome, and great as a leftover too. Great recipe!
