Eating vegetables is a relatively new thing to me. Well, since I started university nearly 15 years ago. Thats actually quite a while, where has the time gone?? Anyway, I wasn't a massive fan when I rocked up to Halls in London , maybe a carrot if you were lucky. I lived with a girl gang who are still very dear pals to this day and slowly, but surely, week by week, then made me try (read force-fed) new vegetables every month. It wasn't long before broccoli with melted cheese was my favourite supper, but we might get back to that another day.
Anyhow, this is about leeks. They are great, aren't they? How do you make them better? Add Cheese, Mustard, Cream and Tarragon...
Ingredients. This is for one person, as a side dish.
1 Leek, trimmed and cut length-ways
200ml Double Cream
50g Cheddar Cheese, grated
2tsp Wholegrain Mustard
1tsp Dried Tarragon
Method
1. Set you oven to 180 degrees Fan, or equivalent
2. Put your trimmed leeks, cut lengthways, into a oven proof roasting tin, cut side up
3. In a small bowl, mix the cream, mustard, tarragon
4. Pour the mixture over the leeks and spread evenly along the surface
5. Pop in the oven and bake for 20 minutes until the cheese has turned golden and started bubbling
6. Eat on their own or with your Sunday Roast, or however you wish!
