Banana & Mixed Seed Flapjacks

Sugar free, vegan and (probably) gluten free. Oats are gluten free? I don't often go out of my way to make things that are 'healthy' or restrictive of ingredients, but I had an ageing pair of bananas and saw a recipe on Instagram that would use them up and it was a happy accident that they turned out with no added refined sugar, no dairy and no flour etc.


I am sure the black banana and raisins must count as one or two of your 5-a-day as well, they just keep getting better! Seeds are good for you two, full or good fats and vitamins, apparently. All marvellous stuff. They also happen to be yummy and as I eat a couple of breakfast, I don't see why they couldn't be enjoyed at any time, by any person, for any occasion...


Ingredients. Makes 16


3 Bananas. The more ripe the better. Or over ripe...

4tbsp Coconut Oil

100g Runny Honey

200g Rolled Oats

100g Raisins, or any combination of dried fruits

100g of Mixed seeds - I used sunflower, pumpkin, sesame

100g Chopped Walnuts

2tsp Ground Cinnamon


Method


1. Preheat the oven to 180 degrees, not fan assisted if possible

2. Melt the coconut oil and honey together in a small pan

3. Mash the bananas in a large bowl with a fork and add all the dry ingredients

4. Pour over the oil and honey and mix to combine fully

5. Press into a lined baking tray, mine was 25cm square and bake for 30 minutes until golden brown and firm

6. Allow to cool fully before slicing and scoffing!
