So, this is the best recipe I have found for biscuits. So far. It is easy, uses things everybody has and can easily be adapted. The biscuits don't spread in the oven so are great for making shapes, like the hearts in the photo.
So the photo shows Valentine love heart biscuits. They were supposed to have beautiful and detailed patterns made from icing and sprinkles, but as my instagram post suggests, I really couldn't be bothered! I took them into work today and everyone who tried them said they were OK, thats enough for me... You could always decorate yours however you like.
You could also add lemon flavour - zest and juice, chocolate, ginger, lavender or whatever your heart desires!
Ingredients
250g Butter, softened
340g Plain Flour, sieved
50g Corn Flour, sieved
125g Icing Sugar, sieved
1tbsp Milk
1tsp Vanilla Extract
Method
1. Put the butter in a big bowl and attack with an electric whisk or used the paddle beater in your stand mixer. You want it light and fluffy, and paler than it started.
2. Then simply add the rest of the ingredients a spoonful at a time and whizz again. This is where you would add / change any flavourings
5. You should have a useable dough by now but simply bring together with your hands if needed and roll out the dough to about 6mm thick. Cut into your desired shapes and place on a lined baking tray and pop in the fridge for 30 minutes. Preheat the oven to 175 degree fan
6. After chilling for 30 minutes, bake for 12 minutes. You don't want too much colour, just an even light golden brown
7. Remove to a cooling rack and see how long you can hold off eating them...
8. Decorate any left, if you like
