I have been reading about Easter Biscuits. What else is there to do in isolation? It seems that not many people know of them and the idea of adding oil of cassia to the mix is unthinkable! What? you buy it from the chemist, and you put it in your food?
Well yes. And you are missing out if you don't. Apparently it's a Somerset thing..? One could substitute 1tsp of mixed spice for the cassia but one would be missing a trick...
Ingredients. Makes about 20
100g Butter
75g Caster Sugar
200g Plain Flour
1 Egg Yolk
1-2 Drops Oil of Cassia
50g Currents
Milk
Method
1. Set the oven to 200 degrees, 180 Fan. Line a couple of baking trays with parchment
2. Cream the butter and sugar together until light and fluffy. Add the oil of cassia with the egg yoke and mix
3. Add the currents and combine fully. Stir in the flour and bring together into a soft dough. Add a dash of milk to help the texture
4. Roll out onto a floured surface to about 5mm and cut circles with a diameter of about 6cm, depending what you have and what you fancy
5. Place on the baking trays and bake for 8-10 minutes or until starting to turn golden brown
6. Remove from the oven and immediately sprinkle with more caster sugar and allow to cool
7. Enjoy, and Happy Easter!
