Granola

I kept buying granola from supermarkets, and eating it by the bag-full. I love the ones with raisins and soft fruits, but quite often I found that the more exotic fruits came with other exotic things like coconut or banana and as much as I enjoy these in the real world, when I am in my little breakfast world, I just don't get it.


So that's why I first started making my own. I can add whatever I like and in any quantity so its exactly what I fancy in the morning. There are a couple of things that stay as a constant - the oats, the honey, turmeric (for the health) and salt, a really vital ingredient. Apart from that, add whatever else you like, seeds, nuts, dried fruit etc. I like to have a mix of raisins, flaked nuts, mixed seeds but it tends to be whatever I have in the cupboard.


I tend to make this at the weekend, the morning I am going to eat the first bowl as its so easy and quick, I suppose it would last a week or so in a jar but mine is always eaten before that!


I am well aware this recipe is rather vague, buts the joy of it...


Ingredients. Makes enough for four breakfasts


2 Mug-fulls of Rolled Porridge Oats. I use the big jumbo ones

100g Dried Fruit - Raisins, Dried Cherries, Dried Apricots, whatever you like

100g Mixed nuts and Seeds - Flaked Almonds, Chopped Walnuts etc

Good dollops of Runny Honey

1tsp Ground Turmeric

1tsp Salt

Plus anything else you have or fancy


Method


1. Preheat the oven to 150 degrees fan

2. Put all the dry ingredients in a large bowl and drizzle over generous amounts of honey

3. Roll the bowl around the coat the honey in oats and fruit, you will start to see little clusters forming

4. Repeat this until you have used your desired amount of honey then spread onto a non-stick baking tray

5. Bake for 10 minutes, then check and shimmy the tray around and bake in 5 minutes instalments until golden

6. Allow to cool and off you go!
