Honey, Orange & Blueberry Loaf

This cake smells delicious, and tastes pretty good too!



Ingredients. Makes 1 loaf


200g Butter

200g Caster Sugar

50g Honey

1tsp Vanilla Extract

3 Eggs

300g Self Raising Flour

Zest of 1 Orange

150g Blueberries


100g Icing Sugar

Juice of the above Orange

1tblsp Honey


Method


1. Preheat the oven to 170º (no fan), prepare a 2lb loaf tin

2. Gently melt the butter in a large pan, allow to cool slightly then whisk in the honey, sugar, vanilla, orange zest and eggs

3. Fold in the flour and then the blueberries, carefully so as not to damage them

4. Pour the mixture into the loaf tin and bake for 60 minutes. Have a look after 40 and if its starting to brown too much, cover with foil

5. Remove from the oven when an inserted skewer comes out clean and allow to cool in the tin for a few minutes before transferring to a wire rack to cool fully

6. To make the glaze, simply whisk the icing sugar together with the honey and half the orange juice, whisk in more juice to achieve a nice, pouring consistency

7. Pour the glaze over the cool loaf, slice and enjoy!
