A bit like a chutney, the texture of a jam, hot with ginger and chilli, and perfect in a ham sandwich or with your roast pork
Ingredients. Makes 5 / 6 jars
800g Cooking Apples, peeled, cored and chopped
65g Chillies, chopped and seeds removed as required
1 Large White Onion, peeled and chopped
100g Fresh Ginger, peeled and roughly chopped
1 Red Onion, thinly sliced
100g Raisins
1kg Jam Sugar
700ml White Wine Vinegar
Glug of Olive Oil
Method
1. Chop the white onion, chilli and ginger roughly, pop into the food processor and pulse for a few seconds. You want it to break down but still have a little texture. Add this mix to a large jam pot with olive oil and cook gently to soften
2. Add the chopped apple, red onion, raisins, sugar and vinegar. Bring to the boil then reduce the heat and simmer for an hour or until the apple has broken down fully and a jam like consistency has been achieved
3. Pour into sterilised jars and seal
