Well, I said I was going to try out variations on the chocolate brownie recipe. I did think my first trial would be custard creams, for who doesn't love a custard cream? However, I was recently sent a load of Fox's biscuits in the post, as you do, and these included their take on the Jammy Dodger (I presume) so I thought what the hell!
White chocolate replaces the milk and the sugar becomes golden and soft. Apart from that, its pretty similar. There is a stage where you melt the butter, sugar and chocolate together but thats not a problem.
As I write this, the batch in the photo are cooling having just come out of the oven and smell is intense - warm, jammy goodness! These will be the perfect afternoon delight on a cold and bright Sunday afternoon....
Ingredients
200g Butter
250g Light Brown Sugar
100g Light Brown Muscovado Sugar
300g White Chocolate
275g Plain White Flour
3 Eggs
1tsp Vanilla Extract
1 packet of Jam'n'Cream Biscuits or Jammy Dodgers or even Custard Creams...
Method
1. Preheat he oven to 180 degrees / 160 degrees for a Fan Oven. Line a baking tin that is 20cm x 30cm
2. Melt the butter in a pan and add the sugars and most of the white chocolate. When its all combined put it to one side to cool a little
3. When it has cooled, add the eggs one at a time and mix thoroughly
4. Add the flour and give it another good mix
5. Add the rest of the chocolate chunks and all but 6 / 8 biscuits (chopped into pieces)
6. Pour the mixture in the tin and push the reminder of the biscuits into the dough in a pattern of your choosing then bake in the oven for 30 minutes
7. When its ready it will be shiny on top and smell yummy! Leave to cool slightly and then stuff in your face!
