Lemon Posset

Heaven in a glass. Simplicity in the making.


Ingredients. Makes 6 for a dinner party. Less for a greedy night on your own...


600ml Double Cream

200g Caster Sugar

3 Lemons, Zest and Juice (about 100ml)


Method


1. Zest the lemons and add this to a saucepan with the sugar and cream. Gently heat to allow the sugar to dissolve, but be careful the cream doesn't catch on the bottom of the pan

2. As the cream starts to simmer, increase the heat slightly and bubble away for a minute or so, stirring constantly. You will feel the mixture thickening up

3. Remove from the heat and stir in the lemon juice, fully combining the mixture

4. Strain the mixture into a pouring jug to remove the zest - you can leave the zest in but I prefer it smooth...

5. Pour equally between your serving vessel and allow to cool. Pop in the fridge until needed and serve with edible flowers, popping candy, or shortbread. Or all three!?
