Nectarine, Blackberry & Star Anise Juice

A little drop of heaven. You may have noticed from my instagram account that I quite liked this. I am a novice when it comes to making up my own recipes so when I come up with something that actually works and tastes alright, I am thrilled!


This is so yummy on its own, and can be enjoyed with plenty of ice or made longer by adding soda water, we made a simple cocktail of 1 part vodka, 3 parts juice and 2 parts soda water - perfect for a weekend sundowner.


Ingredients


2 Juicy Nectarines

150g Blackberries

1 Whole Star Anise

225g Sugar

1.5ltr Water


Method


1. Roughly chop the nectarines and discard the stones. Put in a large pan with 750ml of the water, the sugar and the star anise. Bring to the boil then simmer for 5-10 minutes, until the fruit is soft and the sugar dissolved

2. Remove the pan from the heat and set aside. Add the blackberries to the hot mixture and allow to cool. This helps release the flavour from the blackberries without over cooking them

3. When cool, using a stick blender or food processor, blitz to smooth purée

4. Pass the juice through a fine sieve to remove the seeds and any bits. Add the rest of the water and bottle

5. Delicious on its own with lots of ice or mixed into a cocktail!
