Pineapple Chilli Martini

So as previously mentioned, I don't really go in for so-called national days of this, or international week of that etc but when I saw it was World Cocktail Day today (May 13th) I had to get involved. I am rather partial to a cocktail, you may have gathered and on a Monday is even better! I recently discovered Jawbox Gin on instagram and immediately ordered some of their Pineapple and Ginger Gin Liqueur, and bloody good it is too! Its sweet and lovely and reminds me of those old fashioned pineapple cubes I used to have as a child. Heavenly! Pineapple and fresh chilli are always a winning combination - see the Pineapple Margarita - and who doesn't need fresh lime juice in their life?

Ingredients. Serves 1


2 Parts Pineapple & Ginger Gin Liqueur

1/2 Part Vermouth

1/2 Part Fresh Lime Juice

1/2 A fresh Red Chilli


Method


1. Chop the chilli into your cocktail shaker and add ice, quite a bit of it, aggressively sharp looking bits to break up the chilli

2. Add the rest of the ingredients and shake for a good few minutes, the more the shake, the spicer it becomes

3. Strain into a martini glass and enjoy!
